This was the best egg salad sandwich ever. Cora's was started in Montreal by a single mother who wanted to be home for her children after school so she only served breakfast and lunch. Now she has over 100 restaurants from Halifax to Calgary open 6 am to 3 pm. There don't seem to be french fries or green salads on the menu. Everything is served with fresh fruit.
The first Cora's in Calgary is located at South Trail Crossing at 130 Avenue and Deerfoot Trail S.E. Although the place is brand new, it was packed when we were there, but the turnover is fast. I can't wait to go back again.
